I know, I know - I've mentioned my newfound love for Spanish cuisine several times already on this blog but ever since my trip to Barcelona back in November, I haven't been able to get the memory of it out of my system. In an effort to 1) try out a place that has been gushed over by foodies from all over and 2) whet my appetite for all the spanish goodies I'll soon be consuming, I headed over to Degustation on tuesday night.

Sometimes you get lucky, sometimes you don’t. Degustation has been getting raves from nearly everyone in NYC. Degustation serves small plates in a Prada-black sushi bar setting - quality small tastes in a less formal atmosphere - a model that’s proven rather successful for restauarants like Craft, Momofuku, Fatty Crab, Tia Pol, and others. The reviews have been nothing but glowing so it seemed like a no-brainer for this trip.

Degustation Isn't Just Another Small Plates Restaurant
Back in the days when I was still cutting my teeth as a diner, I used to wonder why restaurants didn't serve their cuisine in smaller portions. The benefits seemed obvious to me. Why couldn't you order a single Robuchon lamb chop along with a small pot of mashed potatoes? Or maybe a tasting size portion of Alain Senderen's Canard Apicius might hit the spot. But even though it seemed like a no-brainer, unless you wanted to eat classical Spanish tapas cuisine, the small plates concept didn't exist outside of my imagination.

Good restaurants deserve and need good customers. The prime trait that separates good customers from bad, regulars from tourists is the frequency of their visits. I don’t have a strict rule for calculating this (it would have to include proximity as well as price), but in New York where it is possible to eat out every night and never repeat, it is important to support places you feel are of merit, especially when they are new. Doing so gives them a more promising future and makes you a valued guest

The latest from the Jack and Grace Lamb empire, Degustation is the replacement for Jewel Bako’s robato grill next door. They kept the same layout: an open kitchen where you can sit at the bar and watch everything unfold as you wait for your food. This time around, polite Latino chefs show their skills behind the counter instead of the more familiar Asian chefs along Second Avenue.
